Why is the cheapest virtual receptionist often dearest?

A message-taking service - human or AI - hands you a list of people to ring back. For a plumber that works: the job is still there in an hour. For a restaurant at 6:40pm on a Friday it does not, because the caller wanted food in twenty minutes and has already ordered somewhere else. You paid to be told about revenue you'd already lost.
